2 slices of bread
1 or 2 slices of cheese
butter bread on one side
lay 1 slice of bread butter side down in skillet..I prefer cast iron
place cheese on top
place 2nd slice of bread butter side up
cook until brown then flip...when nice and toasty..it's finished
optional. Can of tomato soup prepared with milk with a dollop off butter on top

The only way my wife will eat this is if I add a slice of ham and cut it from corner to corner.
But this is what I'm talking about, a simplified version no doubt, but I live on egg tacos and assorted companions like bacon or sausage.
Tomatoes are your friend. Someone reminded me of cantaloupe once and I put them in my will.
I am determined to start a comprehensive grocery list that makes it to where you don't waste food. I waste so much by not constantly looking through my fridge.
Grapes, I've wasted too many grapes.

string cheese...umm umm...some crackers....uh....a side of Heineken....And...maybe some (is it 4 or 5 food groups?) raisens for fiber....hot dogs!!! And a glass of juice???? See, that's why I need some help

My mom had cantaloupe for dinner. Yummy
BLT, Peanut butter and banana on toast (my mom, yuck) , cut up fruit in a bowl, apple slices and colby cheese, fried sweet potatoes (in ghee) and a chicken breast, a big juicy burger with tomato and onion, french toast, (my mom has a beef allergy the burger is mine)
The nearest Kwik Trip for a ready made sandwich and some chips. I live in Iowa and one of those is about 3 blocks away. Really good rolls too, with butter cream frosting!

Egg tacos are the absolute staple of South Texas.
Google pictures of breakfast tacos and you'll get the idea.
My wife doesn't like the texture of bread as much as the taste and texture of tortillas.
You can combine anything from potatoes to refried beans.
It's not quite pizza but... hmmm egg and pineapple taco... excuse me, gotta go.

How to Make It - Egg Taco (and don't forget the jalapenos!!)
Step 1
In a medium bowl, beat the eggs with ¼ teaspoon each salt and pepper.
Step 2
Heat the butter in a large nonstick skillet over medium-high heat. Cook the eggs, stirring, until set but still soft, 2 to 3 minutes.
Step 3
Divide the eggs among the tortillas. Dividing evenly, top with the avocado, salsa, Monterey Jack, and cilantro.

Stir fry with veggies and rice
Chicken or beef cut into small pieces
Rice (minute rice is easy and fast)
Frozen vegetables such as California mix vegetables
Fry meat in olive oil. As the meat gets close to done, add the vegetables, stirring constantly.
Serve with soy sauce if desired.
Spaghetti
1 jar spaghetti sauce, such as Ragu
1/2 box uncooked spaghetti
Frozen meatballs or 1/2 - 1 lb hamburger
If using hamburger, fry till no pink remains. If using frozen meatballs, thaw them in microwave. Add spaghetti sauce and warm. Cook the spaghetti. Serve with green salad and garlic bread.

Roast vegetables
Peel and cut up (1/2" cubes) 2 sweet potatoes and 1 potato. Add cut up onions and some cut up carrots (I use frozen). Toss together with olive oil and salt. Bake at 425 - 450 until browned, 40 minutes or so.
Smoothie
1 small container Greek yogurt - plain, vanilla or strawberry
1/2 - 1 banana
1 cup strawberries (I use frozen)
A splash of milk or almond milk
Blend. Add more milk if too thick.
Pancakes
Purchase a box of pancake mix - with "complete" pancake mix you only add water; with others you add eggs, water or milk, and oil. Follow directions. Fry in electric skillet at 350.

Goulash
2 cups elbow macaroni
1 small can tomatoes
a little onion
1 lb hamburger
Salt, pepper, garlic salt as desired
Cook macaroni per package directions.
Brown hamburger and onion with seasonings. Add tomatoes. Mix in macaroni.
Roast
Place roast with cut up onions, carrots and potatoes in crockpot. Cook on high for 4-5 hrs.
Roast chicken
Rinse, place in crockpot. Salt and pepper. Cook on high for 4-5 hrs.
Chicken breasts in mushroom soup
2 chicken breasts - in crockpot
Cover with can of mushroom soup. Cook on low 6 hrs or high 3 hrs.

Salad
Lettuce (not iceberg)
Other greens of choice (such as arugula, kale, spinach)
Cut up veggies such as bell pepper, carrots, red onion, tomato, cucumber, celery
Avocado
Hard boiled egg
Cooked chicken if desired
Mix together and add dressing

Mashed potaters! (remember that movie? Sling blade, "French fry potaters")
Anyway,
Mashed potaters!
Get a bunch on potaters, cut up (Yukon type),
boil them for like 45 min. to an hour, I think-depends on how many potaters you got in a pot. Or you just check them to what softness you like!
Then smash them! After draining of course.
Meanwhile, melt some butter, add to heated milk, and a bit of salt and pepper!
Then, add to smashed potaters and mix and smash around a bit and serve! Or eat it all yourself. Enjoy!
Oh, don't forget the main dish, chicken or turkey. Marinate first, with whatever ingredients, cook it, then you finally got your main dish with some Smashed Potaters.
I'm gonna do that tomorrow.

Large blade cut pot roast ( you may need to ask for this cut)
Lasagne sized pan/dish
place meat in pan
dump a pkg of Lipton's onion soup over the top
seal with foil
cook at 250 for hours 4-5? the key is slow
gourmet version.....add potatoes and carrots before sealing
make big so you have left overs and some to freeze

TAKE ONE PACKAGE OF DRY ANGEL FOOD CAKE MIX, PLACE IN BOWL
TAKE ONE REGULAR SIZE CAN OF CRUSHED PINEAPPLE WITH JUICE AND POUR OVER DRY CAKE MIX
MIX DRY CAKE MIX AND PINEAPPLE WITH JUICE TOGETHER IN THE BOWL - THAT'S ALL YOU DO!
PUT INTO GLASS 13 x 9 BAKING DISH; BAKE AT 350 UNTIL LIGHT BROWN ON TOP.
NOTE: WHEN CUTTING, USE ONLY A PLASTIC PICNIC KNIFE AS ONE CANNOT EASILY CUT ANGEL FOOD WITH A REGULAR KNIFE.
SO GOOD.

REALLY EASY MUFFINS OR CUPCAKES:
Take one box of dry cake mix, I like to use spice cake mix
Pour dry cake mix into bowl
Take one regular sized can of pumpkin, pour it on top of the dry cake mix
Add 1/2 cup of egg beaters or one beaten egg, mix well
Put into paper cupcake liners in cupcake pan
Bake at 350 until done and toothpick comes out clean.
NOTE: You cannot taste the pumpkin in the muffins. Nicely moist and cannot be frosted because of them being moist.
You can use any type of cake mix; I've used chocolate and it was very, very good and still cannot taste the pumpkin.
One could add chocolate chips or raisins to a mix, but I've never done that. If adding such items, use a Tablespoon or so of the dry cake mix to mix in with the chips or raisins; this way, they will not fall to the bottom of each muffin, but stay mixed throughout.

Black Bean Brownies
These gluten-free treats pack a powerful protein punch. Yields 12 servings
Ingredients 1 (15-ounce) can black beans, drained and rinsed 3 egg whites 1 tablespoon canola oil 1/4 cup unsweetened cocoa powder 1/2 cup maple syrup, honey or agave nectar 1/2 teaspoon baking powder 2 teaspoons vanilla extract 1/2 cup chocolate chips
Directions Heat oven to 350° F and lightly grease
an 8x8-inch baking pan. Blend all ingredients except the chocolate
chips in a food processor or blender until the batter reaches a smooth
consistency.
Fold in chocolate chips and pour into the baking pan. Bake for 15 to 20 minutes or until a toothpick comes out clean.

Let us know how they taste Ruth. I have several celiacs in the family. My ex is one as is our daughter, his daughter, some grandkids, great nieces, etc. The flour alone costs $15.00 the bread is almost $6.00. pasta about $4.00.

Garlic butter flavor rotisserie chicken from Walmart is my friend. Mom loves it chopped with a little mayo like chicken salad on a Bacon flavored Ritz crackers . Pears on the side . Light & easy on digestion . Or we fix mashed potatoes & green peas with the chicken . Marie Calenders honey roast turkey dinner
