Tonight I made roasted sweet potato wedges with cinnamon, roasted chickpeas, and served with endive leaves, quartered cherry tomatoes and cubed cucumber.

I would like to be a guest for dinner at both your home's.  They both sound delicious.  The margarita especially, yummmmm.  My favorite drink.  Don't have very often, but what a wonderful treat when I do.

Yesterday I made chickpea burgers with hummus on romaine with fresh chocolate cherry tomatoes from the greenhouse and roasted cauliflower.  For the kids I made a meatless loaded veggie eggplant lasagna with a side of strawberries, blueberries, apples, kiwi, mango, mandarin orange and raisin fruit salad.  I don't eat cheese but it is the kids favorite.

We are having a ham dinner tonight because on Sunday we did not have ham due to my dad's not being able to eat that much salt. I have made the scalloped potatoes and everything to go with it..

I guess I need to make sweet potatoes tonight. That's the second random reference to them I've come across in the last 15 minutes!

I'd also love a margarita, especially after mailing my check to Uncle Sam.

Chickpea Burgers

1 cup chickpeas cooked (you can cheat and use a can)

Cooked veggies (I use zucchini summer squash carrots and cauliflower)

3-4 large oinions

Little cup apple sauce (I use as an egg replacement to bind it)

Blend in a food processor

Add some chickpea flour until the right pasty consistency

Make into patties and fry.

Fire grilled portabella mushrooms with summer squash cauliflower zucchini and pineapple.  Served with a side of grilled chick peas some endive avocado and mango.

12 months from now "scientists discover Tequila stops ALZ." weeks later they announce "hot chilis found in tacos stops ALZ."

I find it interesting tequila is the only alcohol that does not make me sick. and Curcumin/Turmeric slow ALZ, and so on.

I suggest you all test it out with a marguerita every evening and report back if you find yourself happier and more relaxed.  

Diet and exercise OVER TIME will work wonders.

Mary I am back to vegetarian diet and going to learn how to make some green curry thai food. actually I will find a recipe and Keeper will make it.

Don't know how but I had meat twice in one day more than 3 days in a row and thought - thick is icky! solved at home by I eat everything but meat if Keeper cooks it. easy.

That sounds like a good solution.  For me it wasn't about being vegetarian so much but about removing the things that were increasing my inflammation.  This is what helped me the most.  It just turns out that it became vegetarian gluten and casein free.  The garden taught me that we get back what we put in.  If one is lazy with the garden you get back weeds and disease.  If you tend the garden with care and love you get back a bounty of great food to share and you make friends with your neighbors (because you have so much you have to give it away). 

Love Thai curry.  Hope you will share.

I am, unfortunately, not able to garden anymore but when I did I grew vegetables (with little success) side by side with my iris' and peonies. 

Any one have a good Pad Thai recipe?

Mary, do these burgers 'hold together' well? I'm looking for a recipe for a good tasting Vegan alternative to traditional burgers, something I could include on my tavern menu if I ever get that business off and running. I've tried making some others from scratch in the past, but they are always falling apart on me.

Sounds good, Mary.
Mine was easy. In the summer I grow basil and make pesto sauce with pine nuts and goat cheese since I'm lactose intolerant.  I freeze the extra in ice cube trays.
Take out a cube a few hours before dinner time. Cook some linguine, add broccoli, top with mushrooms. 
Then leftover cold slaw. I chop a bunch at a time, add whatever and dressing. Lasts days.
Finished with a Pepperidge Farm cookie.

 

Also had 2 large mushrooms. Sauted those in olive oil.

That's for you, Mark68, it's not a Margarita, but it's the best I could do on such short notice. And for everyone else, please add the beverage  of your choice. I don't care if it's Hawaian Punch or straight-up tequila,

Just a cooler full of watermelon chunks soaking in some punch, Bacardi rum and a twist of lime and your ready for the beach.  The punch is optional.  Depends how sweet you want it.  I like mine a little on the sweet side.  Perfect beach cooler snack!
