Mrs. O was looking for quick, easy meals, and I'm sure others here are as well. So post something that is easy to make, and does not take a lot of time.
When I go to Costco, I frequently buy one of their rotisserie chickens ($4.99). When I get home, I bake potatoes in the microwave, and heat a can of corn or something. Add a salad, and you have an easy meal.
During the next day or two, I make Mexican chicken. Our whole family absolutely loves it! Here's how I do it -
Using the leftover chicken from Costco, I shred the chicken (2 cups or so).
Mix shredded chicken, 1 small can of mild green chiles, 1 can of tomatoes with green chiles, 1 can of cream of chicken soup, and 1 can of cheddar cheese soup.
Spray an 8X8 or 9X9 casserole dish, then add 1 medium size burrito tortilla, and cover with the mixture. Repeat until nearly full (3 or 4 tortillas).
Top this with 2 cups of shredded Mexicxn cheese.
Bake at 350 degrees for 45 - 50 minutes.
It doesn't take long to put it together, and the time it takes to bake can be used for other purposes.
